A leading international gluten-free expert, Shelley is a registered dietitian, speaker and author of the national best seller Gluten-Free Diet: A Comprehensive Resource Guide. She is a member of the Medical Advisory Boards of the Celiac Disease Foundation and Gluten Intolerance Group in the United States, the Professional Advisory Board of the Canadian Celiac Association and the Grain Foods Foundation Scientific Advisory Board.
Shelley frequently appears on television and radio throughout North America, as well as in many print interviews. Some of the major media appearances have included the NBC Today Show, CBC Newsworld, CTV, Global TV, Globe and Mail, National Post, WebMD, Canadian Living, Chatelaine and Today’s Dietitian.
A popular speaker, she has delivered numerous lectures at medical, dietetic, celiac and food industry conferences throughout the USA and Canada. Some of these included the International Celiac Disease Symposium, National Institutes of Health Consensus Development Conference on Celiac Disease, Academy of Nutrition and Dietetics and Dietitians of Canada annual conferences, the Institute of Food Technologists, International Baking Industry Expo and Natural Products Food Expo Conferences.
She is the author of many articles on celiac disease and the gluten-free diet in leading publications such as Gastroenterology, Digestive Disease Sciences, Pediatrics, Journal of Human Nutrition and Dietetics, and Today’s Dietitian. In addition, she has written for many other publications including textbooks, magazines and numerous patient education resources. Shelley writes “Ask the Celiac Expert” column for Allergic Living Magazine, “Ask Shelley Case” at befreeforme.com, a nutrition column for the National Foundation for Celiac Awareness and the industry expert column in Snack Food and Wholesale Bakery Magazine.
In recognition of Shelley’s major contributions and dedication to educating health professionals and individuals with celiac disease in Canada and the United States, she was awarded the Queen Elizabeth Golden Jubilee Medal. Shelley also received the Canadian Celiac Association’s Honourary Life Member Award.
Shelley earned a Bachelor’s Degree from the University of Saskatchewan in Saskatoon, Saskatchewan and completed her Dietetic Internship at the Health Sciences Center in Winnipeg, Manitoba. Over the past 32 years, Shelley has helped thousands of people improve their eating habits and manage a variety of disease conditions through good nutrition. In 1997 she established Case Nutrition Consulting, Inc., a company specializing in celiac disease and the gluten-free diet.
Professionally, Shelley She is a member of the Dietitians of Canada, Saskatchewan Dietitians Association, American Academy of Nutrition and Dietetics, and their dietetic practice groups Dietitians in Gluten Intolerance Diseases, Nutrition Entrepreneurs, Dietitians in Business and Communications, Medical Nutrition and Food and Culinary Professionals.
Very active in her community and church, she has chaired many conferences and special events. Shelley is an accomplished musician who enjoys playing piano and electric keyboard. She lives with her husband and children in Regina, Saskatchewan, Canada.
